Milk Cake

This is my version of a recipe for 3 Milk (Tres Leches) Cake that TZ gave me.  There are several versions online, so have a look at those too.

Start by making a plain sponge cake. I use Mrs RC's recipe:

8oz sugar
8oz cooking margerine

Blend this together into a smooth cream.

4 eggs

Add these one at a time, whisking them in.

8oz self raising flour

Add this a bit at a time, folding it in slowly.

This is baked at 180C for around 25 minutes - make sure it is cooked!

Keep the cake in the baking tin allow it to cool and liberaly pierce the cake using a skewer.

8oz whipping cream
1 can condensed milk
1 can evaporated milk

Mix these together and then pour some over the cake.  It will soak in quite quickly.  Add more cream in stages until it is all in the tin with the cake.  Cover with cling film and then leave it in the fridge over night.  Logic says that the result will be a sloppy mess, but it is not - it is a wonderfully moist and sweet cake.  You will need a plate and spoon, though. The calories will be horrific, of course...

Calories? Calories? We don't care about no steenkin calories? If you are that far in to the recipe (condensed milk, evaporated milk, whipping cream, sugar), one can assume that keeping the calorie count low is NOT your primary objective. It's the holidays. Besides, calories don't count over Christmas. Sounds like a decadent dessert.

There are no calories when it's made with love :D Tres Leche Cake, I do believe comes from one of the South American countries, but we American Cubans love it! You can find it in tons of Cuban restaurants in Miami :D
